Happy Feast Day!







It was madness and mayhem during the first weekend of August! My patron church St Mary of the Angels at Bukit Batok were having a feast day and me being part of RCIA, got roped in to bake cupcakes for the occasion. Friday night was spent making a ton of frosting, and whole of Saturday was spent baking about 200 cupcakes, my first big baking feat. Thank God I had my RCIA group helping out the whole day. The cooking congregation was decided weeks earlier to be held at my humble abode. You should have seen the amount of ingredients, it was insane! and the inside of my kitchen was a pile of mess but worth the pain! Made good ol simple vanilla on vanilla cupcakes and chocolate on chocolate cupcakes, topped with many pretty sprinkly bits! All the cupcakes sold out within 3 hours and all the proceeds went to the church fund. Hallelujah!

Cupcakes with Southern Flair!


I had a message from a friend on facebook a few weeks asking me for a recipe for Red Velvet Cupcakes. Since I had never tried it before, I did a lil bit of poking around on the internet for a good recipe and tweaked it to my own way. Didn't want to give her something that I just found online without test driving it first. I have to say, they came out divine! For those of you who don't know, the Red Velvet cake is mostly a Southern American recipe and very popular in the midwest. It's characterised by its rich red colour, but the base is basically a simple chocolate enhanced by red food colouring. It is normally paired with a cream cheese frosting, and the marrying of these two factors really make a cupcake that is to die for!
